I love salads any time of year, but I especially love them when fruits, herbs, and vegetables are farm or garden fresh. I especially love salads with fruit and / or herbs.
It took a lot of time and searching the web far and wide for these easy low carb salads because it's hard to find non-meat recipes that are also easy to prepare.
I don't know about you, but spending time in a hot kitchen during the summer NEVER makes it onto my to-do list. Even if you're a top chef, summer begs recipes that don't require heat. After all, if you want it hot, just step outside!
Super Easy Avocado Cucumber Tuna Salad by Primavera Kitchen
This salad is a full meal summer salad with only 4.0 grams of net carbs per serving and 10 minutes prep time. It's a great way to use summer cucumbers when they're tasty and fresh. However, you can make it any time of year since hothouse cucumbers are readily available year round. You can also replace the tuna with canned salmon. Low Carb Keto Coleslaw by Wholesome Yum
With only five ingredients, five minutes prep, and only 1.8 grams net carbs per serving this keto coleslaw is a winner. I suggest you substitute monk fruit powder to taste for the erythritol in the recipe. This coleslaw is a great addition to summer potlucks and barbeques, but also works well for other seasons since cabbage is available year round.

This is more of a dessert than a traditional salad. However, it's great for summer berries and has only 6.0 grams net carbs per serving. Plus, it only takes minutes to prepare.
You can substitute lower fat cream cheese for the full fat cream cheese in the recipe to reduce the total fat and calories. I also recommend substituting monk fruit powder for the stevia in the recipe if you have any sensitivity to ragweed.
This salad is vegetarian and contains dairy. However, it is free of all other common allergens. If you have sensitivity to any of the berries in the recipe, you can just use more of another type of berry, except do not use additional blueberries. They are higher in carbs.
Zucchini Noodles Salad with Parmesan & Walnuts – Low Carb by I Breathe I'm Hungry
OK, disclaimer. This salad is only 15 mins or less prep if you have a spiralizer. If not, then I'd skip this recipe if you're looking for a quick and easy salad. It's vegetarian due to the parmesan cheese and only 5.5 grams of net carbs per serving.
If you have a dairy sensitivity, then you can substitute something else that's low carb for the parmesan. I suggest adding pumpkin seeds or a non-dairy low carb cheese substitute.
Low Carb Strawberry Avocado Caprese Salad by All Day I Dream About Food
Since I love Strawberries and they're low carb, I had to include a strawberry green salad recipe. This one is vegetarian and only 5.74 grams of net carbs per serving. You can easily make it vegan by substituting nuts and/or seeds for the mozzarella. Plus, with that substitution you make it dairy and common allergen free except for the strawberries.
If you have a sensitivity to strawberries, then just substitute a different low carb berry such as raspberries, blackberries or a combination of the two. Yummy!
In the summertime, I substitute fresh oregano for the dried and use a little more. I blend the dressing in my Vitamix when I use fresh oregano. Since this salad also includes strips of basil, it lends itself to deep summer when herbs are fresh and available.
Easy Low Carb Veggie Ranch Salad by Keto Diet App
No American salad roundup is complete without a salad with ranch salad dressing. This salad comes in at only 3.5 grams net carbs per serving with the homemade ranch dressing.
If you want to save some time, you can use a low carb store bought ranch dressing. However, even if you make the dressing this salad is only 10 minutes prep time since the dressing recipe is super simple.
Whether the dressing is common allergen free, vegan or vegetarian will depend on the type of mayonaisse (for homemade dressing) or store bought salad dressing ingredients.
